A variable-capacity tank has a floating lid that sits directly on the surface of the liquid and is sealed with an inflatable gasket. Whatever level the tank is filled to, there is no air gap above the wine, so a part-filled tank stays fresh and protected from oxidation. AISI 304 stainless steel is odourless and inert. It does not react with wine, cider, spirits or honey, it is easy to clean and sanitise, and it lasts for decades.
The cooling jacket lets you circulate cold (or warm) water around the tank to hold a steady fermentation temperature, which is essential for white wines and aromatic ciders.
