In alcoholic distillations, the small basic essencer collects the distillate and makes it easier to read the alcohol percentage during distillation.
When distilling plants or flowers, what is obtained is called a hydrolate, a mixture of water and essential oils.
This device automatically separates the oil from the water. The oil has a different density than water and settles at the top of the glass tube.
The excess water would flow out the other end.
