Whatever level the tank is filled to, there is no air gap above the wine, so a part-filled tank stays fresh and protected from oxidation. AISI 304 stainless steel is odourless and inert. It does not react with wine, cider, spirits or honey, it is easy to clean and sanitise, and it lasts for decades.
