The classic soldered alembic is the traditional Portuguese copper still: a round boiler, a helmet (capitel) on top and a copper coil in a separate cooling tank. It is the simplest design there is, and many distillers still consider it the best for character-rich spirits, because the copper reacts with sulphur compounds and leaves a cleaner, rounder distillate.
Capacity and yield
- Boiler: 5 L
- Yield: about 10–15% of capacity
- Output: roughly 500–750 ml of distillate per run from a 10% ABV ferment
Construction
- 1 mm copper sheet, hand-hammered for strength and even heat
- Soldered and welded joints, no lead or harmful substances
- Polished brass handles and nuts
A good fit for a first still for learning, small batches of fruit brandy, or simply as a beautiful piece in the kitchen.
Heat source not included. Use a gas burner or an electric hotplate of the right size (copper does not work on induction).
