The classic soldered alembic is the traditional Portuguese copper still: a round boiler, a helmet (capitel) on top and a copper coil in a separate cooling tank. It is the simplest design there is, and many distillers still consider it the best for character-rich spirits, because the copper reacts with sulphur compounds and leaves a cleaner, rounder distillate.
This version is made for solid raw material: fruit, grape pomace (marc), bagasse, grains and mashes, the classic route to pomace brandy, fruit spirits and grain spirits.
